RECIPE

Cassava Cake


Cassava or enyucado is a traditional recipe from The Atlantic coast
of Colombia.
It is a cake made with shredded yuca, cheese, coconut
and star anis seeds and is sweet with a wonderful texture


Ingredients:
1lb. Yuca, fresh or frozen
2 eggs
½ a pound of ground beef
Half a sliced onion
½ Sliced garlic clove
¼ of a table spoom of basil
1 tablespoon butter
2 tablespoons flour
Salt and coriander to taste
Oil



Procedures




Peel the yuca and boil it in a salted water, you
know is cooked once is soft, remove from heat
and drain. Make a puree and add eggs, butter,
flour, cilantro and salt.
Put the ground beef in a pan and add slice onion
and garlic clove along with the basil and
a litle bit of salt.
Make a small patties with a spoon of fried
ground beef inside the yuca puree.
Fry the little cakes until they get a dark golden
color and enjoy.
